Peas & Vegetable Maggie  Masala Bhat

There was an article recently in the newspaper which states that Indians are the fourth most vacation deprived humans walking on the face of Earth. I totally agree …. My recent vacation was too short ( 😄😄😄 …shameless , I know ). It was however one of the most memorable ones. Spectacular and dramatic landscape. Mountains looked more alive than I have ever seen. Splendid flora and fauna , pristine almost unspoilt beaches , clear see through waters changing shades of blue and green , contemporary yet staid culture and the most vivid sunsets and sunrises… few poor attempts of bringing back memories which I hope my readers will enjoy seeing…

Since we were close to the waters , seafood was a staple. Been there done that was the norm of the trip. However , one experience which I don’t think I will forget for long was this time we spent on an island in the middle of nowhere and the food we ate there. I could share many recipes of wonderful dishes we gladly gobbled.

 I choose; however, to share this humble dish because it reminds me of my happy times. Like I said earlier, in the middle of nowhere you eat what you are served by your boat operator. There were the usual options of non vegetarian meal and then there was this option of stir fried vegetables in red sauce and spiced fried rice. We were kind of put off with the non veg section of the buffet with a tad bit of doubt of how our tummies would hold the food down in a choppy boat ride. Keeping that in mind and missing our ghar ka khana ( read haldi, garam masala and all the spices we see in mummy’s masala ka dabba 😄) we opted for vegetarian meal. 
Gravy was the usual Chinese flavoured stir fried vegetables. However, what was served to us as spiced rice took us by suprise.It was nothing special but yet we gobbled it up with a child like enthusiasm. There were traces of Maggie masala flavours in the rice. We all love our Maggie. Imagine the satisfaction we got eating that humble rice after eating all kinds of foreign flavours for long…. Hence I share this recipe…. They didn’t give us any veges in our rice but i have tweaked the recipe a bit to make it a little healthy.

Tip :

 You can add prawns , sausages, fish,chicken , Soya , panner , etc …and make it your own creation…

 Peas Vegetable Maggie Masala Bhat

2 cups basmati rice cooked . Each grain needs to be separate.

1 cup boiled vegetables : I chose Peas, carrots and French beans. U can pick anything available in your fridge.

1 tbsp Ginger Garlic paste

1 tsp red chilli powder

2 tsp coriander powder

1 Cachet Maggie masala / 2 cubes of Maggie masala ( photos of the products attached for reference purpose)

1/2 cup finely chopped onions

1/2 cup finely chopped tomatoes

1/4 tsp Hing

1/2 tsp Haldi

Salt to taste

1/4 cup water 

2 tbsp oil

Method

1. Heat oil in a heavy base pan. Add chopped onions and brown them until golden in colour.2. Add ginger garlic paste. Saute until the raw smell of the aromatics vanish.Add tomatoes and cook until they become a mush.

3. Add all the vegetables and powder masala and salt. Mix well. 

4. Add water and let the vegetables soak all the masala .

5. Add rice when the masala is dry and mix thoroughly. 

Serve with cool raita or kadhi
